I made this salad from the first harvested spinach from my garden. It’s so incredibly neat to go pick your dinner and create something out of it, it just makes you feel so healthy and good about yourself.

Ingredients:

2 large handfuls- Spinach, washed and cut up into strips

4-5 chicken tenders, fully cooked and cut into strips. (I sautéed mine in a skillet for about 10-12 minutes)

4-5- large strawberries, washed and sliced

Handful each of: Fresh Gourmet Cranberries and Glazed Walnuts & Golden Raisins and Glazed Pecans

Handful- Feta Crumbles on each salad

Dressing: Ken’s Steakhouse, Honey Mustard

Directions:

Cook chicken over medium heat until no longer pink inside. When done, cut up into strips

While chicken is cooking wash and cut up spinach, divide and place on two plates

Lay chicken strips on top of spinach on each plate

Decorate the outside with cut up strawberries, dividing evenly between the two salads

Add your feta cheese to each

Toss in some of the Fresh Gourmet Toppings of your choice, (I used both as listed above)

Top with your honey mustard dressing, as much as you’d like

Makes: Two large salads
