Did you know that watermelon is a vegetable? Did you know that it’s an anti-inflammatory food that may help with or prevent arthritis, diabetes, colon cancer, heart disease and asthma? Or that it’s a popular gift in China and Japan to bring to a host?
Watermelon is refreshing, light, and when blended with a few simple things you probably already have at home; it quenches thirst on a hot day too. Plus, it has no fat or cholesterol either!

Ingredients:
2 cups – seeded watermelon
2 Tbsp.- cranberry juice (you could also use tart cherry juice)
1 and 1/2 Tbsp- fresh lime juice, plus slices/wedges for garnish
2 Tbsp.- raw, organic honey
Directions:
Cut watermelon into chunks
In a blender add cut up watermelon, cranberry, lime juice and honey and puree until smooth
Add 1/3 cup ice and blend until smooth (you can add a few tsp. of water if needed, but I didn’t need to)
Pour into ice-filled glasses
Garnish with lime wedges/slices
Serve with my Watermelon, Spinach and Arugula Salad with Pistachios and say “Ahhhh!”on a hot summer day!
