Chances are you probably have some of these ingredients in your frig and pantry, so what is one to do? Add a few more ingredients and make some Pad Thai. Easy.
3 – eggs
1- pack rice noodles
2 – 4 Green onions
1/2 cup or so- Crushed peanuts
Bean sprouts, optional
Soy sauce, rice vinegar, maple syrup, lime juice, siracha.
Boil water and soak noodles for 8 minutes
Fry tofu and set aside
Scramble your eggs and set aside
Slice onions and set aside
Crush peanuts, set aside
Cut limes, set aside
If using beans sprouts, wash and set aside
Make Pad Thai Sauce:
4 Tbsp. Soy sauce, 2 Tbsp. rice vinegar, 4 Tbsp. Maple syrup, 2 Tbsp. Lime juice, 1 – teaspoon Siracha. Mix well.
Drain noodles, then add the noodles and eggs and tofu back to skillet you cooked them in, top with the Pad Thai sauce, stir together and heat through. Mix well.
Plate noodles and then top with green onions, crushed peanuts, cilantro, lime and bean sprouts.
