
I typically don’t make recipes with many ingredients anymore, and I don’t make huge elaborate meals. With just a few ingredients I’m good to go and so is my husband.
This is a simple vegan side dish that is hearty enough for a main meal. Or you could pair it with a vegan hamburger and/or hotdog, like we did, and you have an easy vegan meal without much fuss.
Ingredients:
1 — bag of small golden yellow or red potatoes, washed and cut into bite sized pieces.
1 — bag green beans
2 Tablespoons — Dijon mustard, the grainy kind is best.
2 Tablespoons — red wine vinegar. Rice or apple cider vinegar works too.
2 Tablespoons — olive oil
Dash of water
1 teaspoon — Onion powder
Salt and pepper to taste
Directions:
Boil potatoes until fork tender, (fork yeah!)
When tender, add your green beans to the water and boil until cooked yet still crisp, about three to five minutes.
Drain into a colander and place back in pan.
Add in your dressing and stir.
Done!
