
I know you’re spent, so let’s keep it simple, k?
Make this simple, healthy bowl meal, and then go have a seat, preferably with your softest blanket and biggest fuzzy socks and watch your favorite program or favorite online video series on YouTube.
Everything is gonna be alright.
Make quinoa according to package directions and set it aside.
When you’re able, cut up some cherry tomatoes, and a cucumber and set those aside.
Next, open, drain, and rinse a can of chickpeas. Set those aside.
Assemble your bowl or plate with quinoa and then top with tomatoes, cucumbers, and chickpeas and top with your favorite salad dressing.
Done.

If you have the energy to make your own dressing, here is the one I made for this and it was delicious.
Vegan Ranch: (from simply quinoa)
1/4 cup tahini
1 Tbsp. White wine vinegar
1/2 of a lemon, juiced- or one and 1/2 tsp of bottled lemon
1 Tbsp. Parsley, fresh or dried
1 Tbsp. Chives, or chopped up green onions. I used green onions.
1 tsp. Dried dill
1/4 tsp. Onion powder
1/4 tsp. Garlic powder
Salt and pepper to taste
Stir or shake well and generously drizzle over top. (Thin with water to make a drizzly dressing.)
Full disclaimer: I scorched burnt my quinoa today. I thought I turned off the burner, but didn’t realize I hadn’t — until I started to smell a nutty aroma floating through the air in my house. Ugh! Because it was the last of the quinoa, I scooped out what I could save, then gave the pot a good soaking to release the burnt layer down the garbage disposal. And much to my chagrin, the quinoa was infused with a slightly charred nutty flavor that actually made this taste even better. Don’t try this at home. Try it at your own risk. Just sayin.

We require very little and we’ve always had more than enough.
