Tortilla Chicken

A tangy, tex-mex twist on a boring little chicken tenderloin and yummy… you have dinner!

Super easy, really tasty. Serve with whatever your little heart desires or eat them all by themselves dipped in salsa. YUM!

Ingredients:

1 package of chicken tenderloins

1/2 cup salsa (any kind will do)

4 cups tortilla chips, crushed (whatever kind you like)

2 scallions, finely chopped (optional)- I left these out because I didn’t want to go to the store…) they were still good.

Handful of fresh cilantro, cut up – got this out of my garden

Directions:

Place 1/2 cup salsa in a bowl

Dip chicken tenders in salsa

Coat in crushed tortilla chips, press down a bit to make the tortilla pieces stick

Put on a foil lined baking sheet, (I sprayed mine a bit with cooking spray)

Bake at 425 degrees until golden brown and cooked through, about 8-10 minutes

Serve with extra salsa on the side for dipping.
