Buy a mini muffin pan and let the experimenting begin!
These are great for a quick grab and go, I pack them in my husband’s lunch and kids would love them too. Taste just like pizza, just healthier.

1 cup- quinoa (cooked) – follow your box’s directions
1- egg, whisked
1 cup – shredded mozzarella
1 to one and a 1/2 tsp. – garlic powder
1 Tbsp. – dried basil
1 tsp.- oregano
Salt- to taste
Heat oven to 350 degrees
Mix all the ingredients together in a medium sized bowl
Spray mini- muffin tin with cooking spray
Put approximately 1 heaping Tsp. of mixture in each hole
Pat down firm with back of spoon
Cook at 350 degrees for 15-20 minutes
Pop them out of the tin with the bottom of a spoon and serve with warm pizza sauce
Cover any leftovers and refrigerate. Can be eaten cold or microwaved the next day for a few seconds each.
