
Although I’m not much of an ice cream connoisseur, I wanted to make this for my husband as his dessert tonight and I have to say it is over the top good! I found it in this month’s Woman’s Day Magazine.
Cherry and chocolate is my husband’s favorite concoction, so I chose that, but you can make it with bananas and peanuts, peaches, blueberries, crushed chocolate cookies, M&M’s… the recipes are endless.
To make it a little extra special, I bought sugar cones and coated the edge with melted chocolate and let it dry. I also dripped a little warm chocolate inside and allowed it to sit in the freezer so he got a big bite of chocolate at the end. He had seconds. I bet you will too. Enjoy and stay cool!
Ingredients:
12 ounces of fresh cherries, washed and pitted
1/4 cup – sugar
2 Tbsp- water
2 cups- heavy cream, cold
1 – 14 ounce can of condensed sweetened condensed milk
1 tsp. pure vanilla extract
4 ounces- chocolate chips
Directions:
Wash and pit cherries, cut in half
Place cherries, sugar and water in a sauce pan and bring to a boil
Reduce heat and simmer, stirring often for about 10-12 minutes
Transfer this to a bowl and stick in the refrigerator for about 15 minutes
Using an electric hand mixer, mix your cold heavy cream, condensed milk and vanilla in a large metal/glass bowl
Beat on med-high for about 10 minutes until high stiff peaks form as you pull the beaters out from the mixture
Gently fold in your chocolate chips
Assemble:
Spoon half the cream/chocolate chip mix into a loaf pan or 1 and 1/2 quart pan you can freeze
Cover that with half the cherry mixture
Take a butter knife and move it through the mix to make swirls
Repeat this process again on top of that with the other half the cream mix and the cherry mix
Put in the freezer for 4 hours
Keeps in the freezer for up to 2 weeks
Serves: 12
Not a low cal treat: (Oh, o.k… it’s – 324 calories a serving)
But who cares? It’s hot outside, you’ll sweat it out! 🙂
