Chai Tea Apple Pie Coffee Cake

I know it was 90 degrees and humid today but I was cool as a cucumber inside in the A/C baking and yes sir-ree Bob, I made a cake! A Chai Tea Apple Pie Coffee Cake.

This was SO GOOD I had two pieces, oops! But, I rode my bike 5 miles today and planned for the indulgence so whatever…

I had mine with hot chai tea and my husband had his almond milk. Next time I make it, I’ll top it with either vanilla bean ice cream or Cool-Whip to make it really fab.

So, settle down in your jammies after dinner with this and a book and you’ve got the makings of spectacular evening. Cheers! Hope you like it as much as we did.

For Coffee Cake:


1 and 1/4 cup – Gluten-free All-Purpose Flour (I use, Baker Josef’s Gluten-Free All-Purpose Flour)

1/2 cup- organic sugar

1 tsp. – baking powder

1/4 tsp. – baking soda

1/4 tsp.- salt

1 tsp.- cinnamon

1/2 cup- Butter

1/3 cup- Oregon Chair Tea Original Concentrate

1- Organic, Pastured Egg

1 tsp.- pure vanilla extract


Combine flour, sugar, baking powder, baking soda, salt and cinnamon together in a large bowl

Add butter until crumbly, set aside

In a smaller mixing bowl mix together chai tea, egg and vanilla

Add this to the flour mixture and stir until well mixed

Spread into a 9X9 greased pan, set aside


For Topping:


1/2 cup – gluten-free flour (or regular if you’d like)

1/2 cup, plus 2 Tbsp. brown sugar, packed tightly

5 tsp.- butter

2 cups or 2 apples- cored, peeled, sliced and diced small. (I used organic Gala)

1/4 cup – Oregon Chai Tea Original Concentrate


In a small mixing bowl mix together flour, 1/2 cup brown sugar and 3 tsp. of butter until crumbly, set aside

Core, peel, slice and dice your apples (put a few drizzles of lemon on them as you work to prevent browning)

In a small sauté pan, add 2 tsp. of butter and saute apples for 2 minutes

Add the 1/4 cup Chai Tea and saute for an additional 2 minutes

While those cook..

Spread your crumb mixture over the top of the cake batter in your 9×9 pan

Spoon your sautéed apples over the crumb mixture

Sprinkle that with the remaining 2 Tbsp. of brown sugar

Bake at 350 degrees for one hour or until toothpick comes out with moist crumbles of cake on it

While the cake cools for 10 minutes, make yourself a nice hot cup of Chai tea and chillax. You’ve earned this. 🙂
