Kale has to be one of the most nutrient rich foods you can get. Full of vitamins K, A, C, Fiber, Manganese, Tryptophan, Calcium, B6, Potassium, Folate and is part of an anti-inflammatory diet. You can’t go wrong with kale. Any type of kale.
Kale can be tough, fibrous and difficult to chew if eaten raw. But if you massage it with lemon, salt and olive oil what you get is a super palatable, super tasty salad that’s healthy and keeps in the frig for up to three days, if you have any left, which I did not.
Kale is said to improve your skin tone, clear up your complexion and give your skin a great glow. If you know me, you know I’d eat or use just about anything that gives a guarantee like that. 1- large bunch of Kale, (curly, Dinosaur, any type you like…) washed, de-stemmed and cut up into bite sided pieces.
Extra Virgin Olive Oil- ‘approximately’ 1- Tbsp. for this amount of kale
2 tsp. – course salt
Black Pepper- to taste
Red Pepper flakes- to taste
1- lemon, juiced
1- clove of garlic, minced
1-2 Tbsp. – Parmesan cheese
Clean and de-stem your kale, cutting it into bites sided pieces, pat dry or allow to air dry
Add kale to a large mixing bowl then add your lemon and salt and massage well.
Massage the kale with your hands, (I use gloves to really get it mixed well.) Do this for about 3 minutes, it will be vibrant green and any left over lemon juice at the bottom of the bowl will turn green. You will see that it will reduce in size and become softer.
Note: If you have a lot of left over lemon juice at the bottom of the bowl, wring the kale out so it’s not too sour. Once you’ve done that, then drizzle with your olive oil and toss well
Add your minced garlic, red pepper flakes, black pepper and parmesan and continue to mix thoroughly
This will keep in the frig and not become soggy like regular lettuce. Good at room temperature or cold.
You can add any salad fixings you’d like to this salad. Enjoy!
