Apple Nachos

Apple NachosApples circles are layered with warm ooey, gooey natural peanut butter, then topped with all the goodness of nuts and just a hint of sweetness on the very top. Ooohlala! So decadent!

Compared to regular nachos this is a pretty healthy snack, but don’t over do it. This recipe is for two people so don’t forget to share. 🙂

Ingredients: 

3 – apples, washed and cored

1 tsp. – lemon

3 Tbsp. – organic/natural peanut butter, warmed until drizzly

1/4 cup – sliced almonds

1/4 cup – pecans

1/4 cup – unsweetened coconut flakes

1/4 cup – semi sweet chocolate chips

Directions:

Wash and core your apples, any kind (I use gala)

Toss them into a plastic baggie or bowl and toss with 1 tsp. lemon to keep them from browning.

Once coated well with lemon juice, lay on paper towel to dry a bit or dab them so they are not sopping wet.

Lay apple slices in a platter

Warm your peanut butter in a microwavable bowl for a few seconds at a time until pourable and drizzly.

Pour that over the apple “nachos” – this is your “cheese.”

Then top that with your nuts; pecans and almond slices (or any nuts you prefer)

Top that with your unsweetened coconut

Then the chocolate chips

Oooop there it is! Enjoy it. (P.S.- Take napkins.)
