Asian Cobb Salad with Sesame Vinaigrette

I found this recipe at Naturebox. It’s a healthier version of the Cobb Salad that’s usually a bit heavy on the bacon and cheese. This is perfect for a summer day when you want a full belly of goodness without all the greasy, sleepy, slowness you get after a big meal. Pair with a cold lemonade and sit on the patio! Woot!

Ingredients for Salad: 

2- heads of Romaine Lettuce, chopped

1/3 cup of two handfuls of shredded carrots

1/3 cup of shredded chicken or 4 tenderloins cooked and sliced on top

1/4 cup, sliced green onions ( I didn’t have any, so I left them out and it was still just as perfect and tasty…)

1- avocado, diced into cubes

2- hardboiled eggs, sliced or diced

1/2- can of mandarin oranges, drained

Sesame Seeds, toasted or not is fine

Ingredients for Vinaigrette:

1/4 cup, plus 1 Tbsp. – rice wine vinegar

1 – clove garlic, pressed

1 Tbsp.  – sesame oil

1 tsp. – grated ginger

1 tsp. – soy sauce

Whisk in a small bowl, set aside

Assembling salad: 

Lay romaine lettuce on a large platter

Top the lettuce with one row of each of the above ingredients: carrots, chicken, green onions, avocado, boiled eggs and mandarin oranges.

Sprinkle with sesame seeds

Dress before serving, add additional dressing to each individual serving if desired. (And I desired… lol!)
