Grilled Romaine with Avocados, Tomatoes and Green Goddess Dressing

Green Goddess Salad

Absolutely one of our new favs! Got this from Oprah dot com and oh my gosh! Grilling romaine? Who would have thought? I’ve done peaches and many veggies before, but this… THIS takes salad to a whole new level! Grilling brings out the nutty, almost caramel flavor in the romaine. Mix it with all the other ingredients and you have a healthy party in your mouth! Hope you enjoy this as much as we did.

Dressing Ingredients: 

1 ripe Haas Avocado, halfed, pitted, and peeled.

1 Tbsp.- basil, chopped

1 Tbsp.- parsley, chopped

2 tsp.- tarragon

1 tsp.- chopped garlic

3 Tbsp. lemon juice

1 tsp.- kosher salt

Fresh ground pepper to taste

1/3 cup- olive oil

Directions for dressing:

Add all ingredients to a food processor and mix until smooth or use your hand mixer as I did for ease, adding a little water as you go to make it thinner to drizzle. Stop when it’s a nice drizzley consistency.

Salad ingredients:

1/2 medium red onion, thinly sliced

2- medium tomatoes, cut into wedges

2 lemons, divided

1/4 cup- olive oil

2 ripe Haas avocados, halved, pitted and peeled

Salt and Pepper to taste

2 hearts of romaine lettuce, washed and cut in half lengthwise

1/4 cup- parmesan cheese

Salad Directions: 

Toss onion, juice of 1 lemon and 1 Tbsp. of olive oil in a bowl and set aside.

Toss avocados with 2Tbsp. olive oil, juice of 1 lemon and salt and pepper to taste.

Grill avocados cut side down onto hot grill and grill for 1-2 minutes.

Remove and set aside when done.

Brush romaine halves with 1 Tbsp. olive oil and grill cut sides down for 2 minutes.

Arrange grilled avocados, romaine, tomatoes and marinated onions onto a platter.

Drizzle with dressing

Sprinkle with parmesan

Serve with the rest of the dressing on the side for added yumminess! Enjoy!
