Cream of Chicken & Gnocchi Soup

The snow is flying here in North East Ohio and it’s a great time to sit near the fire and have some soup! Throw this together early in the morning and enjoy a nice, big hearty bowl of comfort while you cozy up with your blanket in the evening. Hope you enjoy as much as we did!


1- 1/4 lb. chicken. I used tenderloins

1 cup of carrots, cut into strips

1/2 cup chopped celery

1/2 cup chopped onion or onion powder added to your taste preference

1 tsp. dried thyme leaves

1- 32 ounce chicken broth

1 can (10 3/4 ounce) cream of chicken soup with garlic

1 pkg. of gnocchi (not frozen ones)

1 pkg. of  baby sweet peas, thawed. I left these out and used spinach in place of peas. Just a few handfuls will do, but give it a good chop so it isn’t long and stringy after cooking.


Cook chicken in a skillet with a little olive oil. Cook 5-7 minutes or until no longer pink inside when cut and slightly browned on the outside.

Spray your crockpot with cooking spray

Put your chicken and all ingredients above in the pot, except for your gnocchi and peas (or spinach if you are using that instead)

Cover and cook on Low for 8 hours

Increase heat to High after 8 hours and add in peas and or cut up spinach and your gnocchi

Cover for 30 minutes longer and cook until gnocchi and peas/spinach are tender

Serve with a side salad and voila! Stay cozy my friends!
