Here’s an easy way to make huevos rancheros. Quick, tasty and makes a perfect breakfast or brunch. Can be served with homemade salsa if you want to make it extra tasty! Choose black beans or refried beans, then top with cheddar cheese, salsa, sour cream, guacamole or all these things for a filling meal. Enjoy!
4- Six inch tortillas
1/2 – 16 ounce refried beans (or black). – I used black beans in mine this time, but used refried last time and I think it comes out better. Less watery on top of the tortillas.
1- Ten ounce can of enchilada sauce
2-4 eggs (1-2 per person)
Preheat oven to 300 degrees
Wrap tortillas in foil and heat for 10 minutes
In a medium sauce pan or microwave dish, heat your beans through
Pour enchilada sauce into a skillet and bring to a boil
Crack your eggs and slowly nestle them into the sauce
Cover the pan with the lid for 5 minutes for soft yolks or 7 minutes for firmer yolks
To serve, place tortilla on plate and spread them with beans
With a slotted spoon or spatula gently place an egg on top of the beans
Ladle extra enchilada sauce on top of each and top with all your usual toppings such as salsa, guacamole, scallions, sour cream, cheddar cheese or all of these.
