Mashed Cauliflower

My family loves mashed potatoes. I can peel a 5 lb. bag for just me and my husband and they will be gone in almost one sitting. If there are any left overs, it’s potato pancakes with eggs in the morning.

But, since we’re trying to make healthier choices, here’s a much less guilty version of a pretty close second to homemade mashed potatoes. Who knows, maybe you can get your child who hates vegetables to eat these “mashed potatoes.” – A good side dish for chicken, beef or fish. Enjoy!

Ingredients:

1- Large head of cauliflower

1 ounce chicken broth, low sodium

2- cloves of garlic, minced

2 tablespoons of Parmesan Cheese

Directions:

Wash and cut cauliflower up into bite sized pieces and place in a steamer

Steam until fork tender

Remove cauliflower to a food processor

Add your broth, garlic and cheese and mix until smooth and creamy like mashed potatoes

Add butter and salt and pepper to taste

Serves 4.

      Yep, both the Cauliflower Pizza and Mashed Cauliflower are pretty awesome. I didn’t think I would like ’em, but they turned out delicious! As a carb lover myself, sometimes it’s nice to say you had a healthy pizza, or healthy mashed potatoes instead.
      Anyway, hope you enjoy them as much as we did. Will follow your blog on cooking too! Nothing sexier than a man that cooks! ;P
