I got this recipe from a potluck we had approximately 15 years ago in a Nursing Home. The lady that gave it to me said she took it to all pot lucks and luncheons. I could see why… I could not stop eating it!
I’ve been making it ever since and it’s a huge hit with everyone that tries it! Every time I take it to a party, it’s the first thing gone. Good for a ladies luncheon to having it for your dinner. Hope you enjoy it as much as we do!
1 – 1/2 heads of lettuce, or 3 hearts of Romaine, cut into bite sized pieces
4 – chicken breasts, cut up into bite sized cubes or pre-packaged, pre-cooked chicken pieces
6 – green onions, sliced
1 – Cup almonds, shaved. *I use more to taste… adding more to my individual bowl of salad.
1 – small bag Fritos, crushed
Cut up your lettuce after washing, into bite sized pieces
Add lettuce to a large bowl
Layer the top with chicken and onions
Sprinkle with almonds and toss well. Set aside.
Sai Soo Gai Salad Dressing:
1/4 Cup Sugar
1- tsp. salt
1 tsp. pepper
1/2 cup oil
6- Tbsp. of cider vinegar
Mix in a jar or dressing carafe and shake well.
Before serving, pour the dressing over the entire salad and toss well, sprinkle with crushed Fritos and serve. If you’re not sure the entire salad will be eaten in one sitting, allow your guests to add their own dressing from a carafe instead of coating it so salad does not become soggy. Enjoy!
