Poppy Seed Citrus Salad

We all know we should be eating more fruits and vegetables and with this salad you get both! An easy poppy seed dressing makes this an easy “go-to” dinner salad.

This would be a great dish to take to a ladies style luncheon, or to serve for dinner with a sandwich as I did. Great for a hot summer day.


2 fresh oranges, peeled or 1 large can Mandarin oranges, drained. (I used canned and it was so much easier.)

1/2 small red onion

1 large head of Boston lettuce – or Romaine

Wash lettuce and cut up in bite-sized pieces. Allow to dry. Drain oranges. Peel and cut red onion in half. Cut the half in half moon shapes.

Dressing Ingredients: *Double the recipe for dressing if using the dressing on the side…) This recipe is for coating the salad prior to serving with none additional.) 

1/3 cup canola oil

1/4 tsp. sugar

2 Tbsp. apple cider vinegar

1 Tbsp. minced onion flakes

1 tsp. dry mustard

2 tsp. poppy seeds

Take canola oil, sugar, apple cider vinegar, minced onion flakes, and mustard and pulse in a blender until smooth and creamy. Add the poppy seeds and pulse a few times to mix.

This salad can be served on a plate and dressed individually with the dressing or you can serve it in a bowl and dress it for your guests by tossing it before serving. (*Note: I served mine on individual plates and dressed it myself so I needed to double the recipe for the dressing.)
