Whip this up the night before, pull out and bake for 30 minutes for a tasty, warm and creamy oatmeal. We like it in the morning or anytime. It’s pure comfort food when you don’t feel well and will make you feel cozy and warm. Enjoy!
1/4 cup soft butter
1/2 cup sugar
1- 1/2 cup oatmeal (quick or old-fashioned)
1 tsp. baking powder
1 tsp. salt
1/2 cup milk
1 tsp. vanilla
1/8 cup oil
2 tsp. cinnamon
Fresh berries (I used blueberries)
Spray 9X9 pan with cooking spray.
Combine all ingredients in a bowl, (except berries and cream) and spread out in pan, evenly
Refrigerate overnight, covered with plastic wrap
Next morning, bake at 350 for 30 minutes.
Scoop out individual portions with an ice cream scooper and top with cream, berries and if desired; sprinkled powdered sugar. Enjoy!
