A little Mediterranean tasting meal that is quick and filling. I made the salad ahead of time and let it sit in the refrigerator until dinner. I wasn’t able to find slider buns, so I used Hawaiian style rolls and toasted them in the oven beforehand. The sweet roll with the spicy meat is a tasty treat. Serve with a cool side of Couscous salad and hummus.
1- 10 oz. box of plain couscous
Slider buns or Hawaiian rolls, warmed
1 and 1/2 cups of hot water
1- 1 lb. hamburger
1 1/2 tsp. cumin
1 and 1/2 tsp. dried oregano
1 tsp. salt
4 Tbsp. olive oil, divided
6 scallions, trimmed and sliced
4- roma tomatoes, cut up and quartered
1- seedless cucumber, sliced in half moon shapes
3 Tbsp. of fresh lemon juice (bottled lemon juice is fine too)
1 – 8 0z. hummus
*Cut your tomatoes, scallions and cucumbers up ahead of time and set aside
Place your couscous in a bowl with 1 1/2 cups of hot water (ignore the boxed directions that says to add 3 cups of water) and let sit for 5 minutes before fluffing with a fork. Set aside.
Turn your oven on to preheat to 350 degrees for warming your slider buns or rolls
Place your hamburger in a bowl and combine your oregano, cumin, salt and pepper into it and mix.
Place 2 Tbsp. of the olive oil in a skillet and heat. Add your meat in small patties, making a dent in the center of each one with your finger. (This keeps them from bubbling up in the middle as hamburgers usually do.)
Cook meat 4 minutes per side or until done to your liking. Turn off the heat, cover with lid to keep juicy and make your salad.
While meat is cooking, warm your buns in the oven at 350 degrees for 7 minutes.
Combine couscous with your scallions, tomatoes, cucumbers, lemon juice, 1 tsp. of salt, 1 tsp of pepper (more or less to your tastes) and remaining oil together and stir well.
Divide the couscous among individual plates, serve with sliders and a side of hummus.

Cantaloupe Tea Fresca Serves 8
1- ripe cantalope
2 quarts of cold green tea
1- cup sugar (more or less for your taste)
3 whole limes, juiced
1- lime cut up for garnish (or use a few pieces of the cantaloupe for the garnish, like I did.)
Cut and seed cantaloupe. (Save a few slices for garnish) and puree cantaloupe in a blender
In a large beverage container add your fresh brewed green tea, 1 cup of sugar and the cantaloupe puree and stir well
Add the juice from 3 limes
Pour over ice and garnish with pieces of lime or cantaloupe. YUM!
