My husband loves lasagna and in 10 years of marriage I’ve made it for him only three times. With the skillet method, I’m sure I’ll be making it more and more for him. We made it tonight and it was yummy! Easy peezy! Enjoy!
1/4 cup olive oil, plus more for drizzling
4 cloves of garlic
4 Tbsp. of Basil and Parsley, (you can use fresh or dried)
Sea salt and fresh ground pepper to taste
1 cup ricotta cheese
1 large egg
2 tablespoons of grated parmesan, plus more for sprinkling
6 sheets of no-bake lasagna noodles
3 cups of fresh baby spinach from the bag
1/3 cup fresh mozzarella cheese, sliced
*Can add browned hamburger or cooked ground sausage to the recipe if you like
Mix the ricotta, egg, basil, parmesan cheese and parsley together in a bowl
Heat the olive oil in a skillet. Add garlic and cook until golden brown.
Pour 1 cup of spaghetti sauce in the bottom of the skillet
Lay 2 lasagna noodles over the sauce, drizzle with olive oil and salt and pepper
Cover that with a handful of fresh spinach, four spoonfuls of the ricotta mixture and a few pieces of mozzarella and more sauce
Repeat this until all ricotta mixture, spinach and sauce is used (this is where you’d be layering in your hamburger or sausage if you choose to use it. I cooked my hamburger separately)
Finish remaining top layer with sauce and more mozzarella, cover and simmer for 20-25 minutes
Let the lasagna sit for a few minutes before slicing, garnish with more cheese, basil and parsley if desired.
Serve with french loaf and a salad. Enjoy!
