Penne pasta with Bacon Spinach and Pine Nuts

When I make this, the entire bowl is gone in minutes. No kidding. I have been threatened by my office manager that if I make it and don’t invite her over for dinner, she will hurt me. Hope you love this as much as we do!


1 lb. penne pasta

1 lb. fresh spinach, washed

1 lb. bacon, cut up in pieces

minced garlic (2 tsp of minced, or two fresh cloves minced

pine nuts (2 large handfuls), toasted for 5-7 mins at 350 degrees


Cook pasta until al-dente according to package directions, add some salt and some oil to the water to prevent pasta from sticking.

While pasta cooks, cut up raw bacon with kitchen shears into small pieces. Fry with your minced garlic until crispy. Remove bacon to paper towel lined plate to drain when done.

Put spinach into colander and drain your hot pasta over it in order to wilt it. Shake up and down until all water is out. Use a spoon to move the spinach and pasta around as the spinach will be wilted and prevent water from draining from your colander.

Transfer pasta/spinach back to the pan the pasta was cooked in and add your crispy bacon pieces, your toasted pine nuts and stir.

Add a splash of some of the bacon grease or olive oil to coat well if dry, add sea salt, and fresh ground pepper and top with more pine nuts and serve hot. Can add Parmesan Cheese as well. Serves 4.
