Angel Food Cake with Fruit Compote

If you want to make an angel food cake from scratch, then you don’t need to be on this blog!  I tried it once… Once is the key word. Many steps to do and I felt like I lived in the kitchen!  This blog is about simple, fresh and easy!

Ingredients:

Store bought, ready made angel food cake or the boxed Betty Crocker kind! Add egg whites and oil and mix! Easy!

Fruit Compote:

2 ripe mangos, coursely chopped

1 cup orange juice, divided

2 tsp. of sugar

1 -1/2 cup fresh pineapple, diced

2- kiwis, peeled and diced

1- starfruit, thinly sliced

1 cup red seedless grapes

2 Tablespoons of mint for a garnish

Directions:

Puree mangos and 1/2 cup orange juice together. Add the 2 tsp of sugar, add more if desired.

Pour other 1/2 cup orange juice over the cut up pieces of fruit and marinate at room temp for 20-30 minutes, stirring occasionally.

Cut a piece of angel food cake and serve with a side of mango puree topped with fruit! Very light, yet fulfilling! Another tropical style recipe!
