Pesto Scallops with Toasted Walnuts

This recipe is easy peezy! – 30 minutes to make what tastes like a gourmet meal!!!


1- box Bowtie Pasta (12 oz.)

1 lb. Sea Scallops

1/4 tsp sea salt

1/4 tsp. fresh ground pepper

1 tablespoon olive oil

8.1 oz. basil pesto sauce (I buy Classico brand and use the whole jar)

Shredded Parmesan Cheese

Toasted Walnuts (I use handfuls…) *toasting them brings out their flavor! Heat oven at 350 degrees and toast for 5-7 mins until golden brown.

Fresh Basil (optional)


Cook pasta according to package. Drain. Reserve 1 cup of the water it was cooked in.

While pasta is cooking, saute scallops in olive oil in a skillet over medium heat. 3-4 minutes on each side until cooked through and no longer translucent.

Add the pesto to the cooked drained pasta, Stir in some of the liquid you reserved to thin it some until evenly coated.

Stir in cheese and toasted walnuts. Top with scallops and garnish with fresh basil. Serves 4.
