Thai Lettuce Wraps (just like at Cheesecake Factory, except healthier!)

Thai Lettuce Wraps

Ingredients:

2 heads of Boston style lettuce. (Cut off bottom and wash. Use all leaves until they get too small to add the ingredients to)

2 pkgs of pre-cooked chicken (Cuts down on prep time)

1 jar of Peanut Satay Sauce (in the ethnic isle)

Carrot Sticks (pre-cut, saves time)

Cucumber, thinly sliced

Rice Noodles (in a can, find these by the Chop Suey ingredients)

Chopped Peanuts (in the baking isle)

(Also can add, alfalfa or bean sprouts and serve with rice or couscous.)

Directions:

Prep lettuce cups, carrots and cucumbers and set aside.

Cook Chicken in Skillet with a bit of Olive Oil to prevent sticking (remember, you are heating it through, it’s already cooked)

Once hot, add entire jar of peanut Satay Sauce, (with  a few tsp. of water to thin.) Cut up larger pieces of chicken with the spatula. while cooking. Stir until mixed throughly.

Spoon in chicken mixture, top with all other ingredients and serve. (I put all the ingredients out on the table and have people make their own.) Serves 4.
